Whipped up an experiment that turned out wonderful this morning! Here's what I did:
Pumpkin Pancakes
1/4 cup pumpkin puree
1 tbsp coconut flour
1/4 tsp pumpkin pie spice
1 egg
1/2 tsp baking powder
Whisk all ingredients together. Allow to stand for several minutes. Fry up as pancakes. I made mine into four small pancakes. They are easier to flip that first time if they are small. Drizzle with a little real maple syrup. YUM!
Note: these are a different consistency than traditional pancakes. They are not as 'bread-y". But they are good! I don't have any idea how these fit into a paleo diet, with the baking powder and the maple syrup. They are not Whole30, due to the "paleo-fying" of pancakes and the maple syrup. They are really yummy, though, and they fit my own personal goals for food, so I ATE THEM! :)
