Coconut Flour Waffles
Gluten-free, dairy-free
4 tablespoons coconut milk
6 eggs
1/3 cup agave nectar
½ tsp salt
1 tsp aluminum-free baking powder
1/3 cup coconut flour
1 tsp vanilla
Whisk wet ingredients together. Whisk in dry ingredients, beating well. Allow to stand five minutes before pouring onto waffle iron.
Batter will be thin. Pour onto bottom of waffle iron, filling bottom. Bake until steam stops escaping from sides. Waffles will be very dark in color—this is natural, not burned. These waffles are also softer, less crispy than regular waffles.
Serving suggestion: serve with sliced strawberries that have been drizzled with agave nectar. No other toppings or syrups are necessary! Yum!
Are these Whole 30 friendly? And most importantly, how do they taste?
ReplyDeleteThey are paleo, but not whole 30. Whole30 does not have us doing anything to "paleo-fy" (their term) a regular food. Since on the whole 30 we're trying to do away with cravings, eating something sweet that tastes similar to another sweet food might cause cravings.
ReplyDeleteThese were really good. They are not crispy like regular waffles, though. They were quite limp. I've messed with the recipe some and will post my new and improved pancake recipe above. :)
