Coconut Flour Pancakes
gluten-free, dairy-free
makes 4 good sized pancakes
2 tbsp coconut milk
2 eggs
1 tbsp agave nectar
1/4 tsp salt
1/2 tsp aluminum-free baking powder
3 tbsp coconut flour
1/2 tsp vanilla
Whisk wet ingredients together. Whisk in dry ingredients, beating well. Allow to stand for a few minutes. Spoon onto hot, greased (use coconut oil or olive oil) griddle or fry pan. Flip over when covered in bubbles and sides are well-set.
I made myself two regular round pancakes, but shaped the other two into squares to use as "bread" later this week.
I really like these, but my taste buds are different after my Whole30. If you haven't given up regular grains yet, you may or may not enjoy these? I prefer them to pancakes made from gluten free flours!
