This was SO GOOD! But, let me warn you...don't make a whole batch just for yourself. You may find yourself eating the whole batch...all in one sitting! It is, however, the perfect potluck food, and would be a good way to prove to people that paleo is NOT boring or plain!
BA's Ambrosia
29 oz can pineapple tidbits, in 100% juice, drained (reserve juice)
jar Dole mandarin oranges in 100% juice, drained
4 bananas, peeled and sliced
coconut milk (I used Thai Kitchen. I always have to mix it well first)
1/2 cup toasted, unsweetened coconut flakes (I toasted in the oven briefly under the broiler)
Place all fruit in medium bowl. Add 1 part pineapple juice and 2 parts coconut milk until desired sauciness. I used about 1/4 cup juice and 1/2 cup coconut milk. Mix most of the coconut in, as well. Place in fridge. Before serving, sprinkle the rest of the coconut on top.
This was SO GOOD! I was not expecting it to be so wonderful. It definitely helped me to have it at a dinner that was so full of stuff I love but couldn't eat. However, the ambrosia was just too tempting for me and I scarfed way too much later tonight while working on my online classwork. Live and learn. I'm sticking this recipe in my backpocket, though! I'll definitely use this for potlucks!
