Recipe from: The Clothes Make The Girl: My Favorite Chili Recipe

I started with this recipe, but tweaked it a bit for my own tastes/available food choices:

Here's what I did:

I kept the base the same, using extra light olive oil as my oil. I don't have access to grass fed beef without driving quite a distance, so I used Meijer angus. There was quite a bit of fat, so I did drain it.

For the spices, I skipped the cumin but kept everything else the same.

For the liquids, I used a 29 oz can of Meijer organic petite diced tomatoes with the juice, 1/2 of a 32 oz container Meijer organic beef broth, one small can (10 oz??) organic tomato sauce, and I skipped the water because I put so much more tomatoes and juice in than Mel called for.

I let it simmer those full two hours.

OH. MY. GOODNESS!!!!! This was better than my regular chili, which my whole family adores!

I had a big bowl of it today served over some chopped bok choy. That was yummy and a great way to add in some extra veggies, but I love this chili just right out of the bowl. And it was definitely even better today than yesterday after just that first two hours of simmering.

This is most definitely my new favorite meal. Just wonderful!
