This may well be the Whole30's answer to Tuna Macaroni Salad.
I know this doesn't SOUND like it would go together well, but bear with me, and really consider trying this. This was all stuff I had on hand, and I was just trying to find something that would meet Whole30 guidelines out of the stuff I have onhand two days before payday (translate: no interesting food left in the house). What I ended up with took me back 40 years in an instant, right to my backyard in Detroit in the middle of summer. My mom's macaroni salad with tuna. Not even kidding. This will be my new comfort food go-to!
BA's FANTABULOUS Tuna Salad
1 can tuna, drained
10 or so black olives, sliced
1 hard boiled egg, chopped
coarsely chopped sweet onion (maybe a tablespoon or two?)
1/2 avocado, chopped
freshly ground sea salt and black pepper to taste
drizzle of extra light olive oil
sprinkle of garlic powder (fresh pressed garlic would have been even better)
I tossed this all together with my fork, smashing the avocado as I tossed.
It was SO GOOD! YUM! I ate ALL of it!
